Roles of a regular game:
Villager (everyone who doesn't have a power role)
Powers: None.
Objective: To root out and lynch all the evil roles.
Seer (one person)
Powers: Able to see the role of one person every night phase.
Objective: To root out and lynch all the evil roles.
Werewolf (roughly a quarter of all those playing)
Powers: Able to collectively kill one person every night phase.
Objective: To be the last ones standing. The werewolf/ves win if the number of them is equal to the number of others left.
Roles of a more complex game:
Assassin (one person)
Powers: Able to kill one person every night phase (20-50% chance).
Objective: To be the last one standing. The assassin wins if they make it to the final two.
Defender (roughly a third/quarter of all villagers)
Powers: Able to defend one person every night phase. They can defend themselves, but cannot defend the same person for two night phases in a row.
Objective: To root out and lynch all the evil roles.
Elder (one person)
Powers: Two lives. Also, if the elder dies, then all the good-aligned roles lose their powers.
Objective: To root out and lynch all the evil roles.
There are a lot more roles, like the Spy, but these are the main 6.
There are two phases, a day phase and a night phase.

Everyone lynches whoever they think is guilty/evil. Everyone also has the option of voting for 'No lynch', which means they think no-one should be lynched. It must be done publically in a post, like
